Inspired by Jordi Roca's "Toffee Apple" dessert, this is a living memory of a childhood flavour. The perfect balance between the caramelised fruit and the slightly acidic notes of the fresh fruit.
Made from caramelised apple compote, green apple paste and milk chocolate.
